By evening, you will be seated at Barbara's Heritage Restaurant, surrounded by chandeliers and the scent of adobo. The dancers will perform the Tinikling, their feet moving between bamboo poles like they are dancing on air. You will realise that Manila is not just a city—it is a performance, and you are part of it. Before the dinner show, walk around Intramuros at 6pm when the street lamps turn on. The cobblestone streets glow golden, the bells of San Agustin ring, and the ghosts of Spanish Manila come alive — all without the daytime crowds.
Did you know that the Bamboo Organ in Las Piñas City is the only 19th-century bamboo pipe organ in the world that is still in use today? The organ was built in 1824 by a Spanish friar using bamboo and metal pipes, and it has survived wars, earthquakes, and even a fire.
